a taste of things to come

on a previous cooking demonstration with Spyro Anemogiannis we cooked this tasty dish, I’ve named it Paxos pie but I am sure it has a more authentic name!

Paxos Pie

 Makes one huge pie to feed about 12 people

1 kilo mince

½ kilo of feta

2 onions (chopped)

1 tomato (chopped)

200g rice

250g milk (blue noy noy tin/evaporated milk)

6 eggs (beaten)

Salt/pepper to taste


Line a large oven dish with olive oil and breadcrumbs to form a base

Brown the mince

Add the onion, tomato and some water (1/2 cup)

Remove from the heat and add the rice, milk, crumble the feta into the mixture and 4 of the eggs

Put into the oven dish and pour the remaining eggs and a splash of water on top

Cook for 1 hour at 180
